Heat some olive oil and a knob of butter in a large pan over medium heat. Add one finely chopped onion and sauté for 2-3 minutes until translucent. Stir in 400 g of sliced mushrooms and cook until golden brown, about 5-7 minutes. Add one red bell pepper (sliced) and two finely chopped garlic cloves, cooking for another 3-4 minutes until the vegetables are tender. Season with salt, pepper, and a pinch of chili to taste. Finish with freshly chopped parsley and remove from heat. For the dressing, mix 1 tablespoon each of crème fraîche, natural yogurt, and mayonnaise in a small bowl. Add two finely minced garlic cloves, salt, and pepper, stirring until smooth. Serve the warm mushroom and vegetable mixture with the garlic dressing drizzled on top or on the side. Optional: garnish with extra parsley. Enjoy!
